Technology Locks in Freshness and Flavor: AFA and Industry Partners Introduce Liquid Nitrogen–Frozen Cabbage to Strengthen Supply Stability
Release date:2026-06-22
Cross-Sector Collaboration and Freezing Technology Build a More Resilient Supply Chain
According to the AFA, the project aims to stabilize domestic cabbage production and supply while creating greater value from processed Taiwan-grown vegetables. The agency worked with academic and research institutions, farmers’ organizations, and food processors to introduce an innovative rapid-freezing process. Under the initiative, Beigang Agricultural Production Cooperative grows TAP-certified “Chu-chiou” cabbage during the winter. The freshly harvested cabbage is then flash-frozen to preserve its natural sweetness, crisp texture, and nutritional value. This approach helps manage seasonal surpluses during the peak winter harvest while ensuring a more dependable vegetable supply during the summer flood and typhoon season. With no washing, chopping, or preparation required, consumers can simply heat the cabbage in a microwave and enjoy the fresh, crisp taste of stir-fried Taiwan-grown cabbage at any time of year.
Ready-to-Heat Frozen Vegetables Bring Added Convenience to Everyday Meals
The AFA said that single-serving packs of frozen cabbage are now available at 7-ELEVEN stores across Taiwan and through the retailer’s online group-buying platform. The cabbage can be heated in a microwave and eaten on its own or added to instant noodles, oden, and other dishes. By cutting down on preparation time, the product responds to demand among younger consumers and modern households for convenient, health-conscious food choices, making high-quality Taiwan-grown produce easier to enjoy as part of everyday meals.
By facilitating collaboration among farmers’ organizations, food processors, and retailers, the AFA is helping establish a stable farm-to-table supply model. The initiative allows high-quality Taiwan-grown agricultural products to reach consumers in a wider variety of convenient forms, advancing the goal of putting fresh, high-quality vegetables on the table every day. Looking ahead, the agency will continue working with industry partners to strengthen the competitiveness and brand value of domestically produced agricultural products and develop a more resilient and sustainable agricultural value chain—helping preserve the distinctive flavors of Taiwan.
