To kick off the Rice Bakery Boutique Pavilion on March 14th, the million-subscriber French YouTuber "Ku's dream" took center stage, presenting authentic French crepes infused with seasonal Taiwanese fruits, showcasing the ingenuity and novelty of incorporating rice flour into exotic bakery treats.
Throughout the exhibition, celebrity chefs and champion bakers will grace the stage, sharing their expertise in utilizing rice flour. From the godmother of happy cuisine, Chi-fang Tsai, to the stylish chef Ping-chen Wu, and bestselling baking author Shania, each will demonstrate home baking techniques for desserts. Additionally, four world champions including UIBC World Baker of the Year, Justin Wu, and bread or dessert champions from the World Bakery Cup, Chung-wei Lee, Chia-ming Yang, and Shao-husan Hsu will reveal their baking mastery and tips, inspiring audiences with the enchanting allure of rice flour.

This year's Rice Bakery Boutique Pavilion features 18 Taiwanese manufacturers offering nearly 100 rice bakery products, including rice flour, rice cookies, rice crackers, rice egg rolls, rice-based cotton cheesecake pudding, and rice cakes. Among the highlights are apple rice cookies crafted with apple juice and short-grain rice powder, and rice cakes infused with Hualien's premium angelica and domestic rice flour. Also on offer are savory cakes filled with scallions from Sanshing Township, Yilan and smoked duck from the town's century-old shop. Visitors can also treat themselves to the rice-based castella cake, winner of the gold prize in the 2023 National Competition for Innovative Rice Flour-based Gifts. Sweetened with Taiwan-produced Sanontō brown sugar and longan honey, it boasts layers of caramel and honey flavors, striking a delightful balance of sweetness without overwhelming heaviness Visitors will also find the silver prize winner from that year's competition, a tin cookie box of floral rice crisps, quinoa almond wafers, and peanut brittle crackers made from domestically-produced rice flour.
